NES (this was my introduction to gaming)
DREAMCASET (was and IS an awesome console!)
PS2 (this would have been the last console I really enjoyed. After the PS2 I started gaming way less as other aspects of life took over)

The Dreamcast is arguably the best console (far ahead of it's time) - but Sony decided to undercut it's price and put the final nail in SEGA's coffin after crushing them for years with the Playstation.....which led to the following lyrics in "Jump Around" by House of Pain: ...Try'n to play me out as if my name was SEGA. But I ain't goin out like no punk bitch....

Oh man, I can only pick 3? Well, I narrowed it down.
Ps1, my original introduction to console gaming, my nostalgia is a bit stronger for this one but theirs so many hidden gems on their that I've discovered over the years.
Ps2, just a phenomenal followup to the Ps1, with an even better library of games in my opinion. (Yes, call me a Sony fanboy, I don't care to admit)
Genesis, I wanted to pick a more "retro/cartridge" system, and at the moment this is probably my favourite one, full of my favourite action-platformers and shoot 'em ups.
Ps1, my original introduction to console gaming, my nostalgia is a bit stronger for this one but theirs so many hidden gems on their that I've discovered over the years.
Ps2, just a phenomenal followup to the Ps1, with an even better library of games in my opinion. (Yes, call me a Sony fanboy, I don't care to admit)

I'm having a hard time even voting. This board is about "classic gaming" and yet the choices range from NES thru PS2/Gamecube/Dreamcast. There were many "classic" systems before the NES. I also find it difficult to call the PS2 and Gamecube classics. Sure they are older - but they aren't really classics yet.
My top choice would be the Atari 2600. Given the ability, I'd be tempted to include the Intellivision and Colecovision too. The 1978 - 1983 era is my favourite. If forced to pick from the list my next choices would be NES and Genesis. What about handhelds? The original Gameboy would also be on my list.

Think this also depends (in part) of age of the gamer.
For some the NES was an introduction to classic games that we would not have seen in arcades.

1. NES: I got this for my 5th birthday in 1985 . I vividly remember picking it up at ToysRus in town when they still had all the NES games in the loooooong glass showcase that spanned the entire aisle and you had to pick the ticket and take it to the counter. My parents bought it for me cause my older cousins got one and wouldn't let me play theirs. (I'm the youngest cousin)
2. SNES: I got this one the year it came out for christmas in 1991 I believe. By the age of 11 I was heavy into video games, my NES collection by this point was probably close to 60 or so games, and SNES seemed like the next evolution of games and I had to have it. Never really had too many games for this console, my collection probably peaked around 15 - 20 games. But chock full of all the ones people would want now, FF2, FF3, Chrono trigger, Secret of Mana, Super Mario RPG etc... I was into RPG's can you tell? lol
3. Dreamcast: Well this one was a late find for me. After snes, I kinda left console video games for a while as I became old enough to begin frequenting local arcades and luckily my city had several. It wasn't until one of my buddies introduced me to dreamcast in university around 2002 a few years after it's launch in North America did I fall in love with some of the arcade translations especially Marvel vs. Capcom 2. We played that to death..... Street fighter was a big hit for us as well as crazy taxi.

Very true. I wish more used games stores had older classics...or didn't have ripoff prices.
